Sweet Potato & Purple Yam Chews

A yummy alternative to enjoying sweet potato if you’re tired of having it baked or smashed.



1 large sweet potato
1 large purple yam
1 can coconut milk
coconut oil

Preheat the oven to 350 degrees. Lightly grease a cookie sheet with coconut oil.

Peel yam and potato and slice into quarter inch pieces. Dip the slices in coconut milk and lay out on the cookie sheet. Sprinkle cinnamon and toss in the oven for about 40 minutes (make sure coconut milk has fully evaporated). Perfect as a little dessert or you can eat them as a post WOD snack. You can play around with the thickness of the cuts. Sometimes I’ll go for a little bit more crisp and either pop them back in a toaster oven or make thinner cuts.

* I had an old school electric oven at the time so oven temperature and time may vary.
